Did you know that the flat iron steak is the second-most tender steak, second only to the filet mignon?! It also packs a big beefy flavor like the NY Strip Steak. The flat iron steak is an unusual cut in that it is both highly tender AND highly flavorful! It also boasts great marbling and texture. It is a newer cut of beef that is sometimes also called an oyster blade steak or a top blade steak.
For years, the area that this steak comes from was thought to be unusable because of the thick connective tissue that ran through it. But the University of Nebraska and the University of Florida developed an innovative way of trimming the connective tissue off the meat, which resulted in a tender, delicious new steak--the flat iron!
The flat iron is best cooked on the grill, but can also be used in stir-frys and fajitas, broiled or pan-fried.
Each package is between 0.5-1 pounds and costs $11/package.
